Going on a walk this weekend? Nothing beats a nice jam sandwich at the half way point. Here's how to make some lovely bramble jelly.
Get a jelly bag or tea towel in boiling in water for 3 or so minutes. Wring this well and leave it to cool down. Place the jelly bag on top of the bowl for the juice to fall through later.
Place the apple, blackberries, water and lemon juice in a large saucepan.
Bring it all to the boil, then simmer over a low heat for 25 minutes.
The fruit should now be soft. Tip this and the juice into the jelly bag and leave to drip for 8 hours or until all the juice has been released.
Prepare the jam jars by washing them and leave to dry in a cool oven for 10 mins on a very low setting. Gas mark 1 or something.
Next we need to measure the juice. For every pint of juice we need to weigh 450g/1lb sugar. A lot of sugar, huh?! Put the juice and sugar back into the pan, heat over a low heat until all the sugar has dissolved. Bring to the boil and simmer for 15 minutes.
Jar it all up and enjoy your lovely jam sandwiches later on a walk!
